Leeks are probably my favourite winter veg, I love their sweet onion-y-ness. I have been loving the simplicity of this dish - butter beans, leeks, crispy skin chicken thighs with loads of butter, herbs & garlic and then a nice punchy dollop of mustard to serve! Ingredients for the beans: 700g butter beans 2-3 leeks 5 cloves of garlic 1 shallot 1 tsp nutmeg 150 ish mls of chicken stock 175ml dry white wine Chicken thighs: 4 chicken thighs (to serve 2 people) 3 cloves of garlic Bunch of rosemary B
